WHAT YOU’LL NEED
2 Pork Chops
Salt and Pepper
3 tbsp. Butter
15 oz. Jar of Apple Butter
2 Apples, cored and sliced
2 tbsp. Packed Brown Sugar
1 tsp. Ancho Chili Powder (or just chili powder)
⅓ cup Heavy Cream
PREPARATION
1. Light a fire in your fire pit and begin preheating a cast iron skillet on your Outpost Grill.
2. Season the pork chops with salt and pepper.
3. Adjust your Outpost grill to medium heat and melt half the butter in the skillet.
4. Place the pork chops into the cast iron and cook them for about 3 minutes on each side or until lightly cooked (you’ll be fully cooking the pork chops after the apples are caramelized so make sure to not overcook them in this step). Set the pork chops aside and allow them to rest.
5. Place the skillet back on the grill and add in the remaining butter. Add the apple slices and cook for five minutes or until they’re soft.
6. Once the apples are soft, add ¼ of the jar of apple butter, brown sugar, and chili powder and give it a stir. Mix in the heavy cream and cook until it reaches a light simmer.
7. Push the apples to the outer edges of the skillet and place the pork chops back into the cast iron.
8. Lower the Outpost to medium-high heat and add a dollop of apple butter to each side of the pork chop, allowing it to create a caramelized sear on both sides.
9. Once your pork chops are fully cooked and have your desired sear, remove them from the heat. Top the pork chops off with the caramelized apples, dig in, and enjoy!
