Skillet Cookie Monster
This twist on the classic chocolate chip cookie is the dreamy intersection where fire and ice (cream) meet, and it's so good it's scary. After trick or treating, start up a smokeless fire, and put those treats to good use decorating a gooey, chocolate chip cookie sundae. We love this recipe because it makes a great family-friendly activity both parents and kids can enjoy.
Before you try this at home, be warned. This dessert is hauntingly delicious and might just find its way to the top of your cravings list.
What You’ll Need
Cast Iron Skillet
Tin Foil
Cookie Dough - Use the family recipe or take a quick trip to the grocery store for some pre-made batter.
Ice Cream
¼ cup Butter
Spooky Toppings of Your Choice - Whipped Cream, Candy Corn, Ghost Eyes, Marshmallows, or any Halloween-themed candy.
Preparation
1. Attach the Outpost adjustable grill to your X Series fire pit and start the fire.
2. Spread a quarter-to-half-inch layer of cookie dough in the bottom of the cast iron skillet. Make sure your cast iron is seasoned well in advance.
Live-Fire Cooking Pro Tip: Don’t add too much cookie dough to your skillet, it’s quicker and easier to bake a thin layer. If the dough is too thick it can easily burn.
3. After your fire burns down to coals or a low flame, place the skillet on the Outpost grill over the low heat. This means your grill grate should be near the top of the post.
4. Place two layers of tin foil over the skillet and wrap a corner of it around the handle as an anchor.
5. Use a pair of long tongs and heat protectant gloves to add coals to the top of the tin foil. This allows the cookie to bake from the top and bottom. The double layer of foil will help prevent ash from falling into your cookie.
6. With the cookie over low to medium heat, it should take anywhere from 20-40 minutes to bake. This all depends on the thickness of the cookie batter and the temperature of the fire.
7. Add the butter to a small cast-iron dish and place it on the grill grate or rim of your fire pit until it melts.
Live Fire Cooking Pro Tip: Some signs that will tell you when your cookie is done are a golden color on the top of your cookie and a light brown crust on the edges. The doneness also depends on your preference for a gooey or well-done cookie.
8. Once your cookie is fully cooked, drizzle the melted butter over the cookie and let it rest for a couple of minutes.
9. Now it’s time to start decorating! Add ice cream and toppings of your choice to make a skillet cookie monster or scoop into bowls first to make monster cookie minis. Enjoy!
